This calypso rice is very easy, tasty, and filling. The perfect side for any protein!
- 3 cups Water
- 1 medium Onion (thinly chopped)
- 2 Celery Sticks (thinly chopped)
- 2 medium Carrots (thinly chopped)
- 1 cup Frozen Corn
- 1 cup Frozen Peas
- 1 cup Frozen Cut Green Beans
- 1 tbsp Olive Oil
- 1 tsp Sea Salt
- 1/2 tsp Garlic
- 1/4 tsp Pepper
- 1 1/2 cups Brown Rice (uncooked)
- In a saucepan, combine the water, vegetables, and olive oil.
- Bring to a boil.
- Add rice. Reduce heat, cover and let simmer for 20 minutes.
