Calypso Rice

This calypso rice is very easy, tasty, and filling. The perfect side for any protein!

Ingredients
 

  • 3 cups Water
  • 1 medium Onion (thinly chopped)
  • 2 Celery Sticks (thinly chopped)
  • 2 medium Carrots (thinly chopped)
  • 1 cup Frozen Corn
  • 1 cup Frozen Peas
  • 1 cup Frozen Cut Green Beans
  • 1 tbsp Olive Oil
  • 1 tsp Sea Salt
  • 1/2 tsp Garlic
  • 1/4 tsp Pepper
  • 1 1/2 cups Brown Rice (uncooked)

Instructions
 

  • In a saucepan, combine the water, vegetables, and olive oil. 
  • Bring to a boil.
  • Add rice. Reduce heat, cover and let simmer for 20 minutes.
