Pumpkin Pie Crunch Granola

Ingredients
- 3 cups old-fashioned oats
- 1 cup raw pecans, roughly chopped
- ½ cup pumpkin seeds (pepitas)
- 2 tsp pumpkin pie spice (or a mix of cinnamon, nutmeg, ginger, and cloves)
- ½ tsp salt
- ¼ cup coconut oil, melted (or olive oil for a lighter flavor)
- ½ cup pumpkin puree
- ⅓ cup pure maple syrup or honey
- 1 tsp vanilla extract
- ⅓ cup dried cranberries or raisins (optional, for extra sweetness and texture)
Instructions
- Preheat your oven to 325°F (165°C). Line a large baking sheet with parchment paper.
- In a large bowl, combine the oats, pecans, pumpkin seeds, shredded coconut, pumpkin pie spice, and salt. Stir to evenly distribute the spices.
- In a separate bowl, whisk together the melted coconut oil, pumpkin puree, maple syrup, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir until all the oats and nuts are coated with the pumpkin mixture.
- Spread the granola mixture evenly on the prepared baking sheet, pressing it down slightly for larger clusters.
- Bake for 25-30 minutes, stirring halfway through to ensure even baking. Watch carefully toward the end to prevent burning.
- If using dried cranberries or raisins, stir them into the granola after it has baked and is still warm.
- Let the granola cool completely on the baking sheet; it will crisp up as it cools. Store in an airtight container at room temperature for up to two weeks.
