- 3 cups oats (sprouted & glyphosate free, best)
- 1 cup raw pecans, roughly chopped
- ½ cup pumpkin seeds* (sprouted best)
- 2 tsp pumpkin pie spice* (or a mix of cinnamon, nutmeg, ginger, and cloves)
- 1 cup shredded coconut
- ½ tsp salt
- ¼ cup coconut oil, melted
- ½ cup pumpkin puree*
- ⅓ cup pure maple syrup or honey
- 1 tsp vanilla extract
- ⅓ cup dried cranberries* or raisins* (optional, for extra sweetness and texture)

Preheat your oven to 325°F (165°C). Line a large baking sheet with unbleached parchment paper.
In a large bowl, combine the oats, pecans, pumpkin seeds, shredded coconut, pumpkin pie spice, and salt. Stir to evenly distribute the spices.
In a separate bowl, whisk together the melted coconut oil, pumpkin puree, maple syrup, and vanilla extract until smooth.
Pour the wet ingredients into the dry ingredients and stir until all the oats and nuts are coated with the pumpkin mixture.
Spread the granola mixture evenly on the prepared baking sheet, pressing it down slightly for larger clusters.
Bake for 25-30 minutes, stirring halfway through to ensure even baking. Watch carefully toward the end to prevent burning.
If using dried cranberries or raisins, stir them into the granola after it has baked and is still warm.
Let the granola cool completely on the baking sheet; it will crisp up as it cools. Store in an airtight container at room temperature for up to two weeks.
