Ingredients
 

  • 3 cups oats (sprouted & glyphosate free, best)
  • 1 cup raw pecans, roughly chopped
  • ½ cup pumpkin seeds* (sprouted best)
  • 2 tsp pumpkin pie spice* (or a mix of cinnamon, nutmeg, ginger, and cloves)
  • 1 cup shredded coconut
  • ½ tsp salt
  • ¼ cup coconut oil, melted
  • ½ cup pumpkin puree*
  • cup pure maple syrup or honey
  • 1 tsp vanilla extract
  • cup dried cranberries* or raisins* (optional, for extra sweetness and texture)

Instructions
 

  • Preheat your oven to 325°F (165°C). Line a large baking sheet with unbleached parchment paper.
  • In a large bowl, combine the oats, pecans, pumpkin seeds, shredded coconut, pumpkin pie spice, and salt. Stir to evenly distribute the spices.
  • In a separate bowl, whisk together the melted coconut oil, pumpkin puree, maple syrup, and vanilla extract until smooth.
  • Pour the wet ingredients into the dry ingredients and stir until all the oats and nuts are coated with the pumpkin mixture.
  • Spread the granola mixture evenly on the prepared baking sheet, pressing it down slightly for larger clusters.
  • Bake for 25-30 minutes, stirring halfway through to ensure even baking. Watch carefully toward the end to prevent burning.
  • If using dried cranberries or raisins, stir them into the granola after it has baked and is still warm.
  • Let the granola cool completely on the baking sheet; it will crisp up as it cools. Store in an airtight container at room temperature for up to two weeks.
