- 6 large tomatoes
- 1/2 cup thinly-chopped green onions
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- 1/4 cup fresh parsley minced
- 2 garlic cloves minced
- 1 tsp sea salt
- 1 tsp dried thyme
- 1/4 tsp ground pepper
- Place tomatoes and onions in a bowl.
- In a shaker, combine the remaining ingredients. Shake well.
- Pour over tomatoes. Cover and refrigerate for 1 hour.
