Blueberry Muffins
Who can resist old-fashioned blueberry muffins? And these are healthy!
Ingredients
- 1 cup Whole-wheat flour (finely-sifted)
- 1/2 cup Oat bran
- 2 tsp Baking powder
- 1/4 cup Honey
- 1 Egg or 2 Egg whites
- 2 tbsp Olive oil
- 1/2 cup Apple juice
- 2 tsp Pure vanilla extract
- 1 tsp Lemon juice
- 1 cup Fresh or frozen blueberries
Instructions
- Preheat oven to 375 F.
- Line eight muffin cups with muffin paper.
- In a bowl, mix all dry ingredients, excluding the blueberries.
- In a blender, blend all wet ingredients.
- Add to the dry ingredients.
- Fold in the blueberries.
- Divide mixture evenly into prepared muffin cups.
- Bake for 20 minutes.
- Remove muffins and place on rack to cool.
Notes
Tip: Make a double batch and freeze half of them for a rainy day. They won’t lose their flavor.
