Blueberry Muffins

Who can resist old-fashioned blueberry muffins? And these are healthy!

Ingredients
 

  • 1 cup Whole-wheat flour (finely-sifted)
  • 1/2 cup Oat bran
  • 2 tsp Baking powder
  • 1/4 cup Honey
  • 1 Egg or 2 Egg whites
  • 2 tbsp Olive oil
  • 1/2 cup Apple juice
  • 2 tsp Pure vanilla extract
  • 1 tsp Lemon juice
  • 1 cup Fresh or frozen blueberries

Instructions
 

  • Preheat oven to 375 F. 
  • Line eight muffin cups with muffin paper.
  • In a bowl, mix all dry ingredients, excluding the blueberries. 
  • In a blender, blend all wet ingredients. 
  • Add to the dry ingredients. 
  • Fold in the blueberries. 
  • Divide mixture evenly into prepared muffin cups. 
  • Bake for 20 minutes. 
  • Remove muffins and place on rack to cool.

Notes

Tip: Make a double batch and freeze half of them for a rainy day. They won’t lose their flavor.
