Wild Rice
Your family will go “wild” over this flavorful dish.
Ingredients
- 1 cup wild rice cooked
- 2 tomatoes diced
- 3⁄4 cup small broccoli florets
- 1 1/3 cups green lentils
- 1⁄2 cup mozzarella shredded
- 1 bay leaf
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 1 garlic minced
- 2 tbsp mint chopped
- 1 tbsp parsley chopped
- 1⁄2 tsp sea salt
- 1⁄4 tsp pepper
Instructions
- Put lentils in a saucepan with the bay leaf and cover generously with water.
- Bring to boil and simmer 25 minutes.
- Drain well.
- Steam broccoli until tender, drain.
- Whisk together the oil, lemon juice, garlic, salt, and pepper.
- Pour over hot lentils and mix well.
- Stir in mint, parsley, broccoli, tomatoes, and mozzarella mix well.
- Serve over cooked wild rice.
