Wild Rice
Your family will go “wild” over this flavorful dish.

- 1 cup wild rice cooked
- 2 tomatoes diced
- 3⁄4 cup small broccoli florets
- 1 1/3 cups green lentils
- 1⁄2 cup mozzarella shredded
- 1 bay leaf
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 1 garlic minced
- 2 tbsp mint chopped
- 1 tbsp parsley chopped
- 1⁄2 tsp sea salt
- 1⁄4 tsp pepper
Put lentils in a saucepan with the bay leaf and cover generously with water.
Bring to boil and simmer 25 minutes.
Drain well.
Steam broccoli until tender, drain.
Whisk together the oil, lemon juice, garlic, salt, and pepper.
Pour over hot lentils and mix well.
Stir in mint, parsley, broccoli, tomatoes, and mozzarella mix well.
Serve over cooked wild rice.
