Wild Rice

Your family will go “wild” over this flavorful dish.

Ingredients
 

  • 1 cup wild rice cooked
  • 2 tomatoes diced
  • 3⁄4 cup small broccoli florets
  • 1 1/3 cups green lentils
  • 1⁄2 cup mozzarella shredded
  • 1 bay leaf
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 garlic minced
  • 2 tbsp mint chopped
  • 1 tbsp parsley chopped
  • 1⁄2 tsp sea salt
  • 1⁄4 tsp pepper

Instructions
 

  • Put lentils in a saucepan with the bay leaf and cover generously with water.
  • Bring to boil and simmer 25 minutes.
  • Drain well.
  • Steam broccoli until tender, drain.
  • Whisk together the oil, lemon juice, garlic, salt, and pepper.
  • Pour over hot lentils and mix well.
  • Stir in mint, parsley, broccoli, tomatoes, and mozzarella mix well.
  • Serve over cooked wild rice.
