Ingredients

Instructions
- Prepare the Bones: If using raw bones, roast them in the oven at 400°F (200°C) for 25-30 minutes to enhance the flavor. Skip this step if the bones are already cooked.
- Combine Ingredients: Place the bones, onion, carrots, celery, garlic, apple cider vinegar, black peppercorns, and bay leaves into a large stockpot or slow cooker.
- Add Water: Pour in 12 cups of water, ensuring the ingredients are fully submerged.
- Simmer: Bring the mixture to a gentle boil, then reduce the heat to low. Let it simmer for 12-24 hours. For a slow cooker, set to low and cook for the same duration.
- Strain: Once done, strain the broth through a fine-mesh sieve or cheesecloth into a clean container. Discard the solids.
- Season and Serve: Add sea salt to taste. Serve the broth warm, garnished with fresh herbs. For an optional heartier touch, you can add cooked vegetables for extra texture.
