Two-Minute Chocolate Truffles
These velvety, rich chocolate truffles are the perfect on-plan snack or dessert, ready in just two minutes. Made with healthy fats, they’re low in carbs and satisfy sweet cravings without spiking blood sugar.
Ingredients
- 2 tbsp coconut oil, melted
- 2 tbsp unsweetened cocoa powder
- 1 tbsp almond flour
- 1-2 tbsp powdered sweetener (adjust to taste)
- ¼ tsp vanilla extract
- 1 pinch mineral salt
- Additional cocoa powder (optional)
- unsweetened shredded coconut (optional)
- crushed nuts for rolling (optional)
Instructions
- In a small bowl, combine the melted coconut oil, cocoa powder, almond flour, powdered sweetener, vanilla extract, and a pinch of salt. Stir until smooth and well combined.
- Roll the mixture into small balls (about 1 inch in diameter). If the mixture is too soft, place it in the fridge for a minute or two to firm up slightly.
- Roll the truffles in additional cocoa powder, shredded coconut, or crushed nuts for an extra touch of flavor.
