- 1 lb lean ground turkey or chicken sausage

Instructions
Preheat Oven
- Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.
Cook the Sausage and Veggies
- Heat a large skillet over medium heat. Cook the ground turkey or sausage until browned and fully cooked, breaking it into crumbles with a spatula.
- Add the diced onion, bell pepper, spinach, and mushrooms to the skillet. Sauté for 3–4 minutes until the vegetables are slightly tender. Remove from heat and set aside.
Whisk the Eggs
