Crispy Butterscotch Cookies
Cost-Conscious Meal: Cookies make excellent budget-friendly treats since they usually use common ingredients found in most household pantries. One batch typically yields a large number of cookies, enabling you to freeze some and store some in airtight containers at room temperature for quick treats anytime!
Ingredients
- 2 cups almond flour
- 1⁄4 cup coconut oil
- 1⁄4 tbsp Stevia extract powder (or 1⁄4 teaspoon liquid Stevia or 5-6 Stevia packets)
- 1⁄2-1 tsp Xylitol
- 1⁄2 tsp butterscotch extract
- 1⁄4 tsp sea salt
Instructions
- Preheat oven to 350°F
- Line a baking sheet with parchment paper
- In a medium mixing bowl, mix together the almond flour, coconut oil, Stevia, Xylitol, butterscotch extract, and sea salt until a nice dough forms
- Form 1-inch balls with the dough, and place the dough balls on the parchment-lined baking sheet
- You should have enough dough to make 24 balls
- Flatten cookies gently by stamping with a fork
- Once with the fork tines straight up and down and once side-to-side
- You will make a cross shape with your fork
- Place in the preheated oven and bake 8 to 10 minutes or until lightly browned around the edges
- Remove from oven, let cool for at least 5 minutes before serving
