Ingredients
 

  • 2 cups almond flour
  • 1⁄4 cup coconut oil
  • 1⁄4 tbsp Stevia extract powder (or 1⁄4 teaspoon liquid Stevia or 5-6 Stevia packets)
  • 1⁄2-1 tsp Xylitol
  • 1⁄2 tsp butterscotch extract
  • 1⁄4 tsp sea salt

Instructions
 

  • Preheat oven to 350°F
  • Line a baking sheet with parchment paper
  • In a medium mixing bowl, mix together the almond flour, coconut oil, Stevia, Xylitol, butterscotch extract, and sea salt until a nice dough forms
  • Form 1-inch balls with the dough, and place the dough balls on the parchment-lined baking sheet
  • You should have enough dough to make 24 balls
  • Flatten cookies gently by stamping with a fork
  • Once with the fork tines straight up and down and once side-to-side
  • You will make a cross shape with your fork
  • Place in the preheated oven and bake 8 to 10 minutes or until lightly browned around the edges
  • Remove from oven, let cool for at least 5 minutes before serving
