Pumpkin Spice Coffee Cake

Ingredients
For the Cake:
- 1 ½ cups whole wheat flour (or all-purpose flour)
- ½ cup almond flour (for extra moistness)
- ½ cup coconut sugar
- 1 tsp baking powder
- ⅓ tsp baking soda
- ½ tsp salt
- ½ cup unsweetened applesauce
- ¼ cup melted coconut oil (or melted butter)
- ½ cup Greek yogurt
- 2 large eggs
- 1 tsp vanilla extract
For the Cinnamon Crumb Topping:
- ½ cup cup almond flour (or all-purpose flour)
- ¼ cup coconut sugar
- 1 ½ tsp cinnamon
- ¼ cup melted coconut oil (or melted butter)
- 1 Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9x9-inch baking pan or line it with unbleached parchment paper.
- In a small bowl, combine almond flour, coconut sugar, cinnamon, and a pinch of salt. Stir in the melted coconut oil until the mixture resembles a coarse crumb. Set aside.
- In a large mixing bowl, whisk together the whole wheat flour, almond flour, coconut sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk together the applesauce, melted coconut oil, Greek yogurt, eggs, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients, stirring gently until just combined. Avoid overmixing for a tender cake.
- Pour the batter into the prepared baking pan, spreading it evenly. Sprinkle the crumb topping evenly over the batter.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. If the topping browns too quickly, cover loosely with foil for the last 10 minutes.
- Allow the cake to cool in the pan for about 10 minutes before slicing. Serve warm or at room temperature with a cup of coffee or tea!
