For the Cake:
- 1 ½ cups whole wheat flour (or all-purpose flour)
- ½ cup almond flour (for extra moistness)
- ½ cup coconut sugar
- 1 tsp baking powder
- ⅓ tsp baking soda
- ½ tsp salt
- ½ cup unsweetened applesauce
- ¼ cup melted coconut oil (or melted butter)
- ½ cup Greek yogurt
- 2 large eggs
- 1 tsp vanilla extract
For the Cinnamon Crumb Topping:
- ½ cup cup almond flour (or all-purpose flour)
- ¼ cup coconut sugar
- 1 ½ tsp cinnamon
- ¼ cup melted coconut oil (or melted butter)
- 1 Pinch of salt
Preheat your oven to 350°F (175°C). Grease a 9x9-inch baking pan or line it with unbleached parchment paper.
In a small bowl, combine almond flour, coconut sugar, cinnamon, and a pinch of salt. Stir in the melted coconut oil until the mixture resembles a coarse crumb. Set aside.
In a large mixing bowl, whisk together the whole wheat flour, almond flour, coconut sugar, baking powder, baking soda, and salt.
In a separate bowl, whisk together the applesauce, melted coconut oil, Greek yogurt, eggs, and vanilla extract until smooth.
Pour the wet ingredients into the dry ingredients, stirring gently until just combined. Avoid overmixing for a tender cake.
Pour the batter into the prepared baking pan, spreading it evenly. Sprinkle the crumb topping evenly over the batter.
Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. If the topping browns too quickly, cover loosely with foil for the last 10 minutes.
