No-Bake Key Lime Cheesecake
Easy and Healthy! Try our No-Bake Key Lime Cheesecake! With no wheat flour, this gluten-free, easy and tangy dessert will become a new favorite!
Ingredients
Filling: Reduce
- 1 cup cream
- 2 limes zest and juices (or 4 Key limes)
- 1/3 cup xylitol
- 1 pinch salt
Filling: Beat together
- 1 block cream cheese soften (8 oz)
- 1/2 tsp pure stevia extract or to taste
Crust:
- 2 cups almond flour
- 1/3 cup xylitol
- 1/4 tsp salt
- 1/4 tsp stevia (or to taste)
- 1/2 stick butter (melted)
Instructions
- Put Reduction on Stove (Takes about an hour or two over medium low heat until simmering)
- Mix crust dry ingredients.
- Add melted butter and mix until combined
- Press into 9-10" pie plate (or double recipe to fit into 9x13 baking dish)
- Put in freezer to harden
- Beat cream cheese until fluffy
- Add reduction and Stevia to taste until they combine
- Pour into cooled crust
- Let cool in fridge for approx. 4 hours until set
