No-Bake Key Lime Cheesecake

Filling: Reduce
- 1 cup cream
- 2 limes zest and juices (or 4 Key limes)
- 1/3 cup xylitol
- 1 pinch salt
Filling: Beat together
- 1 block cream cheese soften (8 oz)
- 1/2 tsp pure stevia extract or to taste
Crust:
- 2 cups almond flour
- 1/3 cup xylitol
- 1/4 tsp salt
- 1/4 tsp stevia (or to taste)
- 1/2 stick butter (melted)
Put Reduction on Stove (Takes about an hour or two over medium low heat until simmering)
Mix crust dry ingredients.
Add melted butter and mix until combined
Press into 9-10" pie plate (or double recipe to fit into 9x13 baking dish)
Put in freezer to harden
Beat cream cheese until fluffy
Add reduction and Stevia to taste until they combine
Pour into cooled crust
Let cool in fridge for approx. 4 hours until set
