Omelette Muffin Recipe – High-Protein Breakfast
- 6 eggs free-range
- ½ cup vegetables (of your choosing) diced
- ¼ tsp sea salt
- ⅛ tsp fresh black pepper
- ⅛ cup homemade mayonnaise (or vegenaise, or coconut milk)
- ⅛ cup water
- Preheat oven to 375° F.
- Mix everything together.
- Line a muffin pan with paper or silicone muffin cups.
- Bake in silicone muffin cups for 18–20 minutes, or until a toothpick can be inserted into a central muffin and pulled out cleanly.
