Gut Healing Chicken stock!
Simple basic recipe…
Whole organic chicken
(If daring, chicken feet are good for this )
2 celery stalks
1 Large onion
(I wash but keep peels on veggies)
1/4 cup Apple cider vinegar (I ran out and used organic white vinegar): this acid is used to break down bone and release gelatin into broth.
Salt and pepper
Cover with water to top of stock pot.
Simmer on low heat on stove all day and overnight 12-24 hours!
after several hours, I will pick chicken off the bones to use for soup, chicken salad, etc. then return bones to soup to continue process.
After all complete, I discard all the solid items and strain the broth into glass containers to store in fridge or freezer for use!
You can add other things like turnips, fresh ginger or turmeric root for flavor.
If you are successful- you will have a rich, golden, gelatinous stock that is SUPER healing for the gut, and in my house growing up always considered ‘Jewish penicillin.’ AMAZING to have on hand during winter months when colds and flus abound. Some days I’ll just sip on this broth all day long with fresh squeezed lemon as a gut cleanse. – By Dr. Joelle.
