Baked Oatmeal
Better than oatmeal cookies! This recipe is a family favorite and comes together quickly and without much effort.

- 1 1⁄2 cup oatmeal
- 1⁄2 cup honey
- 1⁄2 cup coconut or almond milk
- 1⁄4 cup olive oil
- 1 tsp baking powder
- 1⁄4 tsp sea salt
- 1 tsp pure vanilla extract
Combine first seven ingredients.
Mix well.
Spread evenly in a 13-inch x 9-inch x 2-inch baking pan.
Bake at 350F for 30-35 minutes.
Immediately spoon into bowls.
Add milk or fruit if desired.
