Baked Oatmeal

Better than oatmeal cookies! This recipe is a family favorite and comes together quickly and without much effort.

Ingredients
 

  • 1 1⁄2 cup oatmeal
  • 1⁄2 cup honey
  • 1⁄2 cup coconut or almond milk
  • 1⁄4 cup olive oil
  • 1 tsp baking powder
  • 1⁄4 tsp sea salt
  • 1 tsp pure vanilla extract

Optional:

  • fresh fruit

Instructions
 

  • Combine first seven ingredients.
  • Mix well.
  • Spread evenly in a 13-inch x 9-inch x 2-inch baking pan.
  • Bake at 350F for 30-35 minutes.
  • Immediately spoon into bowls.
  • Add milk or fruit if desired.
