- 1 tsp smoked paprika
- 1 cup dried red lentils, rinsed
- 4 cups cups low-sodium vegetable broth
- 1 cup cup canned diced tomatoes (no salt added)
- 1 cup kale or spinach, chopped
- 1 medium sweet potato, diced
- Juice of 1 lemon
- Salt and black pepper to taste
- Fresh parsley or cilantro for garnish (optional)
