  • 6 cup brown rice puffed cereal
  • 10 oz vegan marshmallows 1 package
  • 3 tbsp almond butter or coconut oil
  • 1/4 cup pumpkin puree
  • 1 tsp pumpkin pie spice
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla extract
  • 1 sesame seeds or sliced almonds for topping optional

Instructions
 

  • Melt almond butter or coconut oil with the pumpkin puree in a large pot. Cook for 2-3 minutes, stirring frequently.
  • Add vegan marshmallows, stirring constantly until melted and smooth.
  • Remove from heat and stir in pumpkin pie spice, cinnamon, and vanilla extract.
  • Pour in the brown rice puffed cereal and stir until evenly coated.
  • Press the mixture into a greased 9x13-inch pan. Add sesame seeds or sliced almonds on top if desired. Let cool for about 30 minutes.
  • Cut & Serve: Cut into squares and serve at your 90s-themed party!
