Vegetable Chicken Salad

Ingredients
 

Salad

  • 2 cups Cauliflower, chopped
  • 4 cups Fresh Spinach, chopped
  • 1 cup Broccoli Florets
  • 1 cup Cucumber, sliced
  • 2 cups Mixed Green Salad
  • 1 large Chicken Breast, cooked and chopped into cubes

Dressing

  • 1/3 cup Olive Oil
  • 1/3 cup Lemon Juice
  • 1/2 tsp Salt
  • 1/4 tsp Nutmeg
  • 1/2 tsp Garlic, minced

Instructions
 

  • Mix salad with dressing and add cut-up chicken breast.
