Berry Almond Oat Bars

Indulge your sweet tooth with these Berry Almond Oat Bars without the guilt! Serve these bars warm or cold for a delicious on go snack.

Ingredients
 

Bars

  • 2-2 1/2 cups Rolled Oats
  • 1/4 cup Oat Bran
  • 1 tsp Baking Powder
  • 1/4 cup Honey
  • 1 cup Apple Juice
  • 2 tbsp Olive Oil
  • 1 tsp Almond Extract
  • 1/2 tsp Pure Vanilla Extract

Toppings

  • 2 tbsp Fruit only Raspberry jam or other berry jam
  • 2 tbsp sliced almonds

Instructions
 

  • Pre-heat oven to 350F
  • Lightly oil an 8 inch square pan
  • In a large bowl, add oats, oat bran, and baking powder and mix well
  • In another bowl, mix remaining ingredients until combined. Add to oat mixture and mix well
  • Let mixture sit for 10 minutes
  • Stir mixture one more time, add to pan and smooth the top.
  • Bake for 35 minutes
  • Let bars cool inside of the pan
  • Once cake is cooled, evenly spread jam on top and sprinkle sliced almonds
  • Cut into bars & serve warm or cold
