Heat oil in a wok or large saucepan over medium-high heat.
Add the onion, then cook and stir until browned. Mix in garlic and spices.
Add broccoli, pea pods, and mushrooms. Cook and stir for 1–2 minutes.
Add coconut milk and chicken. Continue cooking for 10–12 minutes, until chicken is no longer pink. Stir and remove from heat.
