Salmon Veracruz satisfies everyone’s pallet with delicious Alaskan-waters fish, salsa for those who love sweet, and capers for those who prefer a more savory meal.
- 1 lb wild caught Alaskan salmon (~3-6 oz or ~2-8 oz filets)
- 2 cups salsa homemade (or check ingredients for no sugar and no MSG)
- 1 tbsp capers
- ¼ cup green or black olives
- 1 tsp oregano
- ½ tsp salt & pepper
Preheat oven to 350° F.
Put salmon in a baking dish.
Mix the rest of the ingredients and pour over salmon.
Bake for about 10-15 minutes.
